My grandmother (nani) used to make these delicious rolls. The making of this is similar to Patra but here small Patra (arbi) leaves are taken and on it, a batter is applied. Here individual leaves are taken and rolled unlike patra where more than 2 arbi leaves are taken.

Ingredients and spices that need to be Prepare to make Arbi rolls:

  1. 8 Arbi leaves
  2. For batter to be applied on Arbi Leaves
  3. 1 cup chick peas flour
  4. 3/4 cup wheat flour
  5. 2 tbsp rice flour
  6. 7-8 green chillies
  7. 1/4 cup coriander leaves
  8. 2 " ginger piece
  9. 5-6 garlic cloves
  10. 1/4 piece coconut
  11. 1/2 cup jaggery dissolved in water
  12. 1 tbsp white sesame seeds
  13. 1 tbsp carom seeds
  14. 1 tsp turmeric powder
  15. 2 tsp garam masala
  16. 1/2 tsp asafoetida
  17. to taste Salt
  18. 2 tbsp lemon juice
  19. 2 tbsp fresh curd
  20. 2 tbsp oil
  21. For shallow frying:

Instructions to make to make Arbi rolls

  1. In a mixing bowl take the flours.
  2. In a mixture jar make a green paste using coriander leaves, green chillies, garlic cloves, ginger and coconut. To make the paste smooth add some water if required.
  3. Now add this ready green paste to the flours and all the other ingredients mentioned for the batter also.
  4. Mix everything properly and make thick batter. Keep this mixture aside for some time.
  5. Wash all the Arbi leaves with water and dry them with a cloth. Remove the veins if they are thick.
  6. Take single Arbi leaf and apply the ready batter on it's surface as shown in the picture.
  7. Now fold both the sides of the leaf in such a way that the touch the centre vein. Then fold 1/3rd of the folded part from the above of the leaf as shown in the picture.
  8. Again apply a little batter on the folded part and roll it tightly. Similarly make other individual rolls.
  9. In a nonstick pan place all the rolls for shallow frying. Add 3-4 tablespoons of oil and carefully place all the rolls to get fried from all the sides. Cook the rolls on low flame.
  10. When the above surface of the rolls becomes golden brown,switch off the gas and serve the arbi rolls with green chutney.
